New Recipe: Pickled Fennel, radish & cucumber with roasted beets. Everything a postpartum body needs.

As a postpartum doula I find great joy in supporting new families during the postpartum period. Meal prep and cooking are not just tasks for me, but a way to nourish both the body and soul of the parents as they navigate this beautiful yet challenging time. There is something truly special about preparing wholesome meals that provide comfort and sustenance during those early days of parenthood. It brings me immense satisfaction to see the smiles on their faces as they enjoy a warm, homemade meal without having to worry about the added stress of cooking. In these moments, I feel grateful to be able to make a difference in their lives by providing this simple yet impactful form of support.

When making foods and meals, I try and focus on healing and nutritional foods that aid in postpartum healing and lactation.  Fennel and beets are 2 of my favorite ingredients.

  • Fennel & dill aid in milk production.
  • Apple cider vinegar with the mother (like Bragg) to replenish gut health.
  • Beets have Vit. C, Iron & B12 & can help with blood pressure.
  • Cucumbers have fiber to help with postpartum bowel movements. 
  • Radishes are rich in Vit. C, B12 and folate. 
This recipe is quick and easy and will store well in the refrigerator. My favorite way to eat this salad is: 
  • Whip 1/4 cup of cottage cheese in a food processor or blender. 
  • Toast Joseph's Lavash Bread
  • Spread whipped cottage cheese onto the toast. 
  • Top a good amount of picked salad on top sprinkle smoked salmon- I recently found Honey Smoked Fish Co. Original Honey Smoked Salmon and LOVE it. 
  • Add a few sprigs of dill.

Notes on the beets and radish- any variety will work! The red beet made a fun red color for Valentines Day, but golden beets would not color the rest of the vegetables.
